Allow more options in TrafficDefinition

Extended Description

The current implementation of TrafficDefinition only allows for the definition of vehicle categories. However, cars and trucks can be very different from each other and users may want to constrict this further.

Additionally, Sources and Sinks may also be interesting to create pedestrian traffic in cities. To do that, the TrafficDefinition would have to allow for the definition of pedestrians (and PedestrianControllers) or we would have to introduce an euivalent for pedestrians and allow this to be used in Sources and Sinks.
